Vegan Pear Blondies

I actually made a vegan recipe. I usually scoff at the idea of vegan food because butter and cheese are two of my main food groups. However, I was looking for a dessert to bring to dinner at a couple’s house who started experimenting recently with vegan foods and this actually looked pretty good. As a bonus, since it didn’t have any butter or eggs in it I could convince myself that it was OK to eat a lot more of it.

And look who was there to help!

Ingredients

3c cooked chickepeas

1/4c flour

1/4 c ground flax seed

1T baking powder

3/4t baking soda

1/4t salt

1 t vanilla extract

1/4c sunflower oil

1/4c peanut butter

1/2c sugar

1/4c maple syrup

1/4c soy milk

1c chocolate chips

2-3 medium-large pears, peeled and diced

Directions

Preheat oven to 350° and oil a 8×12″ baking dish. Place everything except for chocolate and pears into a blender and blend until smooth.

Add the chips and pear and mix well. Pour into baking dish and bake for 4o minutes.

**I ended up baking it for a lot longer because it never really seemed to set. But eventually, I just gave up and just accepted that it was going to fall apart (even after cooling a couple of hours). However, the next day it did finally set up to where it could be handled as a bar even though it was still very soft.
