This is a super easy and super yummy lunch recipe that I make often. Prepare not to be impressed, but still satisfied. 🙂
1 can black beans
1 can black eye peas
1/2 yellow bell pepper, 1/2 orange bell pepper, 1 cucumber, 1 poblano, 1 tomato
4T Olive oil
Salt, pepper, cumin
Chop peppers, cucumber and tomato into equal bite size chunks.
Drain beans and add to bowl. Add olive oil, vegetables, seasonings, cilantro and cheese (if using)
Mix well and let sit in in the refrigerator overnight.
