Homemade Peanut Butter


I don’t know why but I can no longer stand the taste of commercial peanut butter (Jiff, Skippy, etc).  Trader Joe’s peanut butter is still good but when I was at another grocery store shopping for ingredients for banana cupcakes with peanut butter frosting (recipe to be shared soon!) and I was faced with the choice between Nasty or Very Expensive Organic I decided to just make my own. Super easy and super delicious–I hope you try it out!


2 cups roasted peanuts 
1 teaspoon kosher salt
1 1/2 teaspoons honey
1 1/2 tablespoons peanut oil


Place the peanuts, salt and honey into the bowl of a food processor. Process for 1 minute. Scrape down the sides of the bowl. Place the lid back on and continue to process while slowly drizzling in the oil and process until the mixture is smooth, 1 1/2 to 2 minutes. You may need to add more honey and/or oil depending on your preferred consistency and how sweet you like it. Place the peanut butter in an airtight container and store in the refrigerator for up to 2 months.
